The holidays are upon us!

I realize some people have been preparing for the holidays for several weeks already (some even longer!) but I am just now getting into holiday recipes! The low carb diet will have to wait (my New Year's resolution I guess ) because I don't think any of these recipes are carb friendly. :)

I'm thinking about dividing the recipes into two or three recipes for each post. I guess that really depends on how many recipes I find that look to die for! I'm sure many will be dessert type recipes since I love to bake!

On to the recipes ............ I'll start off with breakfast. I found this little number at "tomatoesonthevine-velva.blogspot.com"

French Toast Souffle




Ingredients:
1 bakery loaf of butter crusty bread-10 cups cut into 1-inch cubes
8 (ounces) low-fat cream cheese, softened
8 large eggs
1-1/2 cups milk
2/3 cup half and half cream
1-1/4 cups maple syrup
1/2 teaspoon vanilla
2 tablespoons powdered sugar

Directions:
1.  Place bread cubes in a lightly greased 9x13 baking pan.

2.  In a large bowl, beat cream cheese with an electric mixer until smooth.  Add eggs one at a time, mixing well after each addition.  Stir in milk, half and half, 1/2 cup of the maple syrup, and vanilla until mixture is smooth.  Pour cream cream cheese mixture over the bread; cover, and refrigerate overnight.

3.  Remove souffle from refrigerator, and let stand at room temperature for 30 minutes.  Meanwhile, preheat oven to 350 degrees F.

4.  Bake uncovered, for 50 minutes, or until a knife inserted in the center comes out clean.  Pour remaining 3/4 cup maple syrup over souffle, and sprinkle with powdered sugar.  Serve warm.

This is Shelby. We got her when she was barely six weeks old. She started getting picky about her food when she was around eight months old I think. Since then, we've tried everything it seems! Wow

I can not believe it has been three weeks since I've last posted! I knew it had been a little bit, but, three weeks?

One thing that has kept me away was trying to get going on a low carb diet. It was the new, hot item several years ago, but I didn't jump on the bandwagon then. For one thing, I wasn't trying to lose weight. But also because I'm the kind of person who will sit back and wait for either the good reviews or the bad reviews before I follow the crowd. :)

I took my time doing research on low carb eating, then researched menus and recipes so I would be prepared instead of going gung ho and then stopping because I ran out of ideas of what to eat.

So, I will probably be adding low carb recipes to my blog now, easier for me to keep up with them that way too! I may even try to "low carb" the recipes I've already added, at least the ones I can anyway.

Colder Weather Recipes

Classic Beef Stew  A bowl of delicious, warm stew on a cold winter evening? The only thing I can image would be cozier is eating a bowl of delicious, warm stew while sitting in front of a fire, an afghan tucked around your feet, on a cold winter evening. :)

Of course, that could be just my romantic fantasies of a cozy winter night too since I live in middle Georgia and we rarely get a winter bad enough for all that. But still ............

Anyway, I love beef stew no matter what the temp is outside, but I definitely make it more in the colder months. Usually I like to serve it with a crusty garlic bread and maybe a small side salad. If no salad, then I'll do an apples and cinnamon type dessert.

In celebration of colder weather coming soon, ( it's still in the mid to upper 70's here) I thought I'd put up a few stew recipes, all from Betty Crocker.

Classic Beef Stew (pictured above)
Prep Time- 25 min, Total Time- 3 hr 45 min, Servings- 4

Ingredients:

1
tablespoon vegetable oil or shortening
1
lb boneless beef chuck, tip or round roast, cut into 1-inch cubes
3
cups water
1/2
teaspoon salt
1/8
teaspoon pepper
2
medium carrots, cut into 1-inch pieces
1
large unpeeled potato, cut into 1 1/2-inch pieces
1
medium green bell pepper, cut into 1-inch pieces
1
medium stalk celery, cut into 1-inch pieces
1
small onion, chopped (1/4 cup)
1
teaspoon salt
1
dried bay leaf
1/2
cup cold water
2
tablespoons Gold Medal® all-purpose flour
  1. In 12-inch skillet or 4-quart Dutch oven, heat oil over medium heat 1 to 2 minutes. Add beef; cook about 15 minutes, stirring occasionally, until brown on all sides.
  2. Add water, 1/2 teaspoon salt and the pepper. Heat to boiling. Reduce heat to low. Cover; simmer 2 hours to 2 hours 30 minutes or until beef is almost tender.
  3. Stir in remaining ingredients except cold water and flour. Cover; cook about 30 minutes or until vegetables are tender. Remove bay leaf.
  4. In tightly covered jar or container, shake cold water and flour; gradually stir into beef mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute until thickened.
Slow Cooker Mexican Beef Stew
Prep Time- 5 min, Total Time- 9 hr 35 min, Servings- 6
Ingredients:
2
lb beef stew meat
1
can (28 oz) Muir Glen® organic diced tomatoes, undrained
1
cup frozen small whole onions (from 1-lb bag)
1
teaspoon chili powder
1
package (1 oz) Old El Paso® taco seasoning mix
1
can (15 oz) Progresso® black beans, drained, rinsed
1
can (11 oz) Green Giant® Mexicorn® whole kernel corn with red and green peppers, drained
  1. 1. In 3 1/2- to 4-quart slow cooker, mix beef, tomatoes, frozen onions and chili powder.
  2. Cover; cook on Low heat setting 9 to 11 hours.
  3. With whisk, stir in taco seasoning mix. Stir in black beans and corn. Increase heat setting to High; cover and cook 15 to 30 minutes longer or until thickened. 
I know one isn't a beef stew, but it looked so yummy and it is still a cold weather stew. 
Slow Cooker Creamy Herbed Chicken Stew (Cooking for 2)
Prep Time- 15 min, Total Time- 6hr 35min, Servings- 2
Ingredients:
1
cup baby-cut carrots
1
Yukon Gold potato, cut into 1 1/2-inch pieces
1/4
cup chopped onion
1/4
cup sliced celery
1/2
teaspoon dried thyme leaves
1/8
teaspoon salt
1/8
teaspoon pepper
1/2
pound boneless skinless chicken thighs
3/4
cup Progresso® chicken broth (from 32-ounce carton)
1/2
cup snap pea pods
1/4
cup whipping (heavy) cream
2
tablespoons Gold Medal® all-purpose flour
1. Place carrots, potato, onion and celery in 2 1/2- to 3 1/2-quart slow cooker.
2. Sprinkle half of the thyme, the salt and pepper over vegetables in slow cooker. Place chicken on vegetables. Pour broth over top.
3. Cover and cook on low heat setting 6 to 7 hours or until juice of chicken is clear when center of thickest part is cut (180ºF) and vegetables are tender. Add pea pods; cook 5 to 10 minutes or until crisp-tender.
4. Remove chicken and vegetables from slow cooker to serving bowl, using slotted spoon. Cover with aluminum foil; keep warm. Increase cooker to high heat setting. Mix whipping cream, flour and remaining thyme; stir into liquid in cooker. Cover and cook about 10 minutes or until thickened. Pour over chicken and vegetables.

Burt's Bees Review

I have been given the opportunity to try out and review a couple of products from the Burt's Bees sensitive line as a Bzzagent, and if your skin is as sensitive as mine, this line was made with you in mind. If I use just any product on my face, I end up with patches of dry,  irritated, and itchy red areas; usually on my upper lids and the high spots of my cheekbones. 

I have been using the facial cleanser and the daily moisturizing cream, both with cotton extract, for about three weeks now and I have to say I am very happy with them. My face is always left feeling moisturized without feeling greasy and not once have I had any problem with irritation or redness. I have used a very high SPF lotion on my face everyday for the last year or so and the Burt's Bees Daily Moisturizing Cream does not contain SPF, so if I were to recommend any improvement at all, it would to be to add SPF. However, I just wait about 5 - 10 minutes, then use my SPF lotion.

Baked Mac and Cheese!

Part of the beautiful rainbow we saw a few nights ago. It had been raining off and on for two days and then, a little before sundown, we went outside to witness this gorgeous sight. It was actually a double rainbow, but the picture doesn't show that very well. The bottom of this rainbow was the clearest, brightest, most colorful I have ever seen!

Holiday Time!

I know it's not even Halloween yet, but it's not too early to think about the up-coming holidays! I love this time of year with all the lights and decorations, the holiday songs and TV specials, and I especially love the excuse to do all the special holiday baking!

Have you thought about giving personalized gifts this year? I was so tired of being stressed wondering if I was giving something that was really needed or wanted, or if I was just wasting my time and my too hard to come by money. Of course I always got the response, "Oh, I like it, thanks." but, I always wondered.

Last year I got smart though! Since 90% of the people on my gift list are dads or gr-parents, I ordered calenders and coffee mugs from Vistaprint! They have so many personalized gift options: photo books, ornaments, (any newborns that need a "My 1st Christmas" ornament?) tote bags, T-Shirts, etc. The design tool to create your masterpiece couldn't be easier to use and the prices are great!

I'll be ordering from Vistaprint again this year. No standing in long lines, no using expensive gas to drive from store to store, just sitting in front of my computer creating beautiful gifts that I know will be appreciated for years to come! I think this year will be totes for the women and long sleeve T-Shirts for the men. :)

Starbucks says it wants to allow donations from it's millions of visitors to the almost 7,000 company owned stores to stimulate the U.S. job growth. Donating

I did something a couple of days ago that I've always wanted to do and never have, donated blood. Hubby and I donated as a last minute thing because we were walking into Walmart and there sat the donation van, it was fate! I still have a pretty decent sized bruise, she said something about small veins, but so worth the feeling of knowing we were helping people!

New Wheels!

I don't have to worry about how I'm going to get to school anymore! We were quite happily surprised that we were able to get a 2012 Nissan Sentra for 2.9%, no down, and for the same payments we were already making.  Of course it added about three years to a car loan (we were down to two years on the Durango) but hey, it is a 2012 and it should last me for a long time!

Hubby is coming home!

Well, hubby is on his way home, for a week! That could be a good thing or a bad thing, lol. J/K I love him to death but sometimes after a few days of being home, I guess he gets bored and starts being a pain. Hanging around in the kitchen while I'm trying to make dinner, flipping channels right when I'm just getting into something, finding projects for "us" to do. Don't you just love those kind of projects? :D

Darned Economy

So, my husband and I did some in-depth research today and if we can't find a car better on gas, I can't go to school. The school (nursing) is so far away, gas prices are so high, and my vehicle is so bad on gas it would cost around $179 a week for me to attend school. I was so stoked about going too because it would mean a big boost to my earning potential!

Oh well, I've always believed everything happens for a reason ............ what do you think?

My first post! How exciting!
For a long time, everything I knew about blogging came from the movie Julie & Julia. I loved the movie, but I don't think I'm brave enough to tackle making a dish from an entire recipe book in a year, sorry. :)
A little about me:
My husband drives a truck over the road and even though it can get annoying sometimes, (like when I get a sudden urge to go have a nice dinner out and everyone I know is busy) for the most part, I'm fine with it. Dinner is whatever I feel like making, I watch whatever I want on TV, and I come and go as I please. In fact, I have to make major adjustments whenever hubby is home because he is a remote control and a bed covers hog, lol.
I'm excited to finally have a blog of my own though and I can't wait to meet some new people. Any questions or any suggestions any of you may have, feel free to leave a comment!
